Delicious Homemade Pasta Sauce

 

Ingredients

  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 3 garlic cloves, minced
  • One 28 ounce can whole tomatoes
  • One 28 ounce can crushed tomatoes
  • One 12 ounce can tomato paste
  • 1 tablespoon brown sugar
  • 1 to 2 teaspoons dried oregano 
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • ¼ teaspoon black pepper

Instructions

  • Heat oil in large, deep pan.
  • Add onions and garlic to oil and sauté for about 3 minutes, until tender.
  • Add the remaining ingredients.
  • Heat to boiling.
  • Immediately reduce heat and simmer, partially covered, for 1½ hours.
  • Stir occasionally.
  • After it has simmered, serve with fresh, whole grain pasta.
  • Cool remainder of sauce completely and freeze the leftover sauce in freezer bags. This will keep for several months and can be thawed and used anytime. Along with whole grain pasta and a side of steamed (frozen) veggies, this makes a quick, nutritious meal.

Tip: Add favorite ingredients in the last 15 minutes of simmering. You can add mushrooms, green or red peppers, olives, and any other vegetables that you enjoy.

Makes approximately 8, one-cup servings.

Folic Acid May Be Beneficial in Patients with Recurrent Colorectal Adenoma Who Are Folate Deficient

November 20, 2009 — Researchers affiliated with the Health Professional Follow-Up Study and the Nurses’ Health Study have reported that folic acid supplementation in patients with recurrent colorectal adenoma was not protective or harmful in most patients. However, patients who were folate deficient had a significant 39% decrease in adenoma recurrence. The details of this study appeared in an early online publication on October 28, 2009 in the American Journal of Clinical Nutrition.
