Sesame Asian Noodles

The flavor combination of sesame oil, green onions, carrots, and soy sauce produces an amazing dish. Even better, all of the ingredients are included in one dish, making cooking time fast and clean up easy.

Serves four as a main dish. 

Ingredients

Noodles

  • 1 9-ounce package whole-grain Udon noodles
  • 1 ½ cups frozen, shelled edamame
  • 2 cups grated carrots
  • 1 cup chopped green leafy vegetable, such as kale, bok choy, or spinach.
  • 1 bunch chopped scallions (green onions)
  • 4 tablespoons toasted sesame seeds

Sauce

  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon rice wine
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon warm water

Instructions

  • Bring large pot of water to boil and cook noodles according to package directions.
  • When 4 minutes of noodle cooking time remains, add edamame and carrots to boiling water and stir to mix. For example, if noodle instructions specify 8 minutes of cooking time, boil the noodles for 4 minutes, then add the edamame and carrots and boil for 4 additional minutes.
  • When 4 minutes has elapsed (boiling time is complete), drain noodles, edamame, and carrots.
  • Place noodle mixture into large serving dish and stir in green leafy vegetable, scallions, and toasted sesame seeds.
  • Place sauce ingredients into leak container and shake vigorously to combine.
  • Pour sauce over noodle mixture and stir to combine.
  • Serve warm, room temperature, or cold and enjoy!

Per serving: 465 calories; 58 grams of carbohydrates; 22 grams of protein; 16 grams of fat; 11 grams of fiber; 440 milligrams sodium.

Folic Acid May Be Beneficial in Patients with Recurrent Colorectal Adenoma Who Are Folate Deficient

November 20, 2009 — Researchers affiliated with the Health Professional Follow-Up Study and the Nurses’ Health Study have reported that folic acid supplementation in patients with recurrent colorectal adenoma was not protective or harmful in most patients. However, patients who were folate deficient had a significant 39% decrease in adenoma recurrence. The details of this study appeared in an early online publication on October 28, 2009 in the American Journal of Clinical Nutrition.
