Warming Lentil Stew

 

Try this delicious lentil soup that contains unusual and delicious spices, including coriander and cinnamon.

Serves 4

Preparation Time: 30 minutes to pre-cook lentils and 15 minutes of preparation.

Ingredients

  • 1½ cup dry lentils
  • 5 cups water
  • 1 small red onion, chopped
  • 1 Tablespoon olive oil
  • ½ teaspoon cinnamon
  • ½ teaspoon coriander
  • ½ teaspoon salt
  • 1 Tablespoon chopped parsley

Instructions

  • Bring water and lentils to a boil. Reduce heat, cover and simmer for 30 minutes.
  • Heat olive oil over medium-high heat and add onion. Cook onion, stirring often, until translucent, about 5 to 7 minutes.
  • Add onions, cinnamon, coriander, and salt to lentils. Stir, heat over medium heat for 5 minutes.
  • Garnish with parsley, serve and enjoy.

November 20, 2009 — Researchers affiliated with the Health Professional Follow-Up Study and the Nurses’ Health Study have reported that folic acid supplementation in patients with recurrent colorectal adenoma was not protective or harmful in most patients. However, patients who were folate deficient had a significant 39% decrease in adenoma recurrence. The details of this study appeared in an early online publication on October 28, 2009 in the American Journal of Clinical Nutrition.
