Spicy Peanut Udon Noodles

 

Preparation time: 35 minutes.

Serves four as a main dish.

Ingredients

Stir-Fry

  • 1 package whole-grain udon noodles (check in the ethnic food, natural health food, or Asian food section of your grocery store)
  • 1 medium head of broccoli, cut into small pieces
  • 1 large carrot, sliced
  • 3 scallions (green or spring onions), chopped (substitute ½ of a red or yellow onion if scallions are not available)
  • 2 tablespoons sesame oil

Dressing

  • ½ cup warm water
  • 1/3 cup peanut butter
  • 2 tablespoons fresh ginger root, peeled and finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tablespoon low-sodium soy sauce
  • ¼ teaspoon red pepper (cayenne)

Instructions

  • Bring a large pot of water to a boil.
  • While water is coming to a boil, prepare and chop stir-fry ingredients.
  • Add udon noodles to boiling water and cook according to package directions.
  • While noodles are cooking, heat the sesame oil over medium-high heat in a large nonstick skillet or wok for 1 to 2 minutes.
  • Add broccoli, carrots, and scallions to sesame oil. Stir-fry until lightly cooked, about 5 minutes. The vegetables should be brightly colored and still crisp.
  • Turn heat on stir-fry down to lowest setting.
  • Drain udon noodles and add them to the stir-fry pan. If your stir-fry pan is not big enough, you can place the noodles back into the large pot (without water) and add the stir-fry ingredients to this pot instead.
  • Combine dressing ingredients in a lidded, leak-proof container and shake vigorously to combine. Don't worry if the peanut butter is still "chunky." It will melt when it is added to the stir-fry.
  • Pour dressing over noodle/stir-fry mixture. Toss to combine.
  • Serve and enjoy!

November 20, 2009 — Researchers affiliated with the Health Professional Follow-Up Study and the Nurses’ Health Study have reported that folic acid supplementation in patients with recurrent colorectal adenoma was not protective or harmful in most patients. However, patients who were folate deficient had a significant 39% decrease in adenoma recurrence. The details of this study appeared in an early online publication on October 28, 2009 in the American Journal of Clinical Nutrition.
