Apricot Dessert Smoothie

 

Smoothies are a great way to get more healthy foods into your diet. They make a great dessert or midday snack. Apricots and peaches are a good source of dozens of healthful vitamins, minerals, and other nutrients. Tofu and yogurt provide protein, while the flaxseeds provide both protein and fiber.

Serves four as a dessert or snack.

Ingredients

  • One 15-ounce can of 100% juice-packed apricots, drained (frozen fruit can be used as well)
  • One 15-ounce can of 100% juice-packed peaches, drained (frozen fruit can be used as well)
  • 1/3 cup frozen raspberries
  • 1 cup plain nonfat yogurt
  • 1 tablespoon ground flaxseed
  • 3 ounces tofu*
  • 3 ice cubes

Instructions

  • Blend and enjoy!

Per serving: 166 calories; 29 grams of carbohydrates; 8 grams of protein; 2 grams of fat; 3.5 grams of fiber

*For tofu, try a shelf-stable brand that does not need to be refrigerated until it is opened. Look for it in the health food, ethnic food, or Asian food aisle of your grocery store. Refrigerate any leftover portion of tofu.

ACOG Updates Cervical Cancer Screening Guidelines

Folic Acid May Be Beneficial in Patients with Recurrent Colorectal Adenoma Who Are Folate Deficient

November 20, 2009 — Researchers affiliated with the Health Professional Follow-Up Study and the Nurses’ Health Study have reported that folic acid supplementation in patients with recurrent colorectal adenoma was not protective or harmful in most patients. However, patients who were folate deficient had a significant 39% decrease in adenoma recurrence. The details of this study appeared in an early online publication on October 28, 2009 in the American Journal of Clinical Nutrition.
